Cranberry Pop-kin Spice Granola Bars
Enjoy the fresh flavors of fall in this chewy granola bar featuring the sweetness of cranberries and pumpkin, pumpkin-pie-spice, and the fun texture of popcorn! Dairy-free, nut-free, and gluten-free ... these easy-to-make bars are bursting with scrumptious autumn flavor!
- 1 cup oats
- 1/4 cup oat flour (grind 1/4 cup oats in your blender)
- 1/2 cup pumpkin puree
- 1 cup sweetened dried cranberries, chopped
- 1/2 tsp pumpkin-pie-spice
- 1/2 tsp cinnamon
- 1 tsp maple syrup
- pinch of salt
- 1 cup popped popcorn
- Lightly spray 8x8 pan. Mix all ingredients in a large bowl. (The popcorn will break a bit as you fold it in -- that's fine.) Firmly press the mixture into the pan. Cut rectangle slices before putting it in a 350 degree oven for 25-30 minutes.
We used Simple Pop from DocPopcorn.com for a lightly salty kick to balance the sweet pumpkin and dried fruit. Other gourmet popcorn flavors like Apple Crisp or Klassic Kettle would also be awesome in these yummy bars.
